Viva Italia Risotto
This is a tasty recipe that uses a boxed risotto mix for simplicity.
One box Lundberg herbed risotto mix
One small onion, chopped fine
One small red pepper, diced
Five or six medium mushrooms, sliced
One bunch of asparagus, cut into one-inch pieces
White wine
While preparing the risotto according to the directions on the box, in olive oil sauté the onions until they are soft and translucent. Add red pepper and cook until tender. Add mushrooms and a splash of white wine; continue cooking. Meanwhile, microwave asparagus for 3-4 minutes or until done to your liking. When all components are done, add together and enjoy.
N.B. Add Parmesan or Romano cheese to the cooked risotto both before and after combination with the vegetables.
